My tank is finally cycled after 2 weeks. I used DR Tim’s ammonia and tetra safe start plus and it worked! BUT I’m ordering peacocks cichlids off of imperial Tropicals the only problem is I can’t order until next week!! It will be a $300 dollar order so I can’t do it this week it has to be next week so realistically I won’t get my fish for another 2 weeks can I just keep dosing ammonia in the mean time until I get my fish to feed the bacteria?!

Yup; just keep dosing the ammonia and do a big water change the night before they come in. (to deal with the nitrates that will have built up). No big deal!

My nitrates are through the roof 160 plus should I do a water change to get them down? I’ve heard it can or can’t crash a cycle

I’d do a water change to keep readings in test kit range. Won’t impact cycle and may help it as elements like carbonates are replenished.
