I have a sidthimonki loach. I have noticed them eating a lot of algae lately, which I think might be contributing to their loss of color, does this make sense?

It could be based on the water quality and they can't only eat algae, they would need to eat other food such as blanched vegetables and some wafers for their diet.

What veggies do you recommend?

I would recommend firstly blanched zucchini, it's a popular and desired vegetables for almost all he fish, boil it, and let it cool down. Boilin the vegetable allows it to sink and soften, only place the zucchini in there for 1 day as it will mess the water and parameters... blanched broccoli stems, cucumbers, and peas.
