Practice with your camera and your tank to find good settings. The best thing to do is take a lot of pics from different angles and with different lighting until you start getting some good ones. If the flash bothers your fish, do NOT use it. Also, realize it is hard to take really good pics of fish, sometimes you gotta take what you can get. For example, this pic almost came out great, but I forgot to turn off the light in the room:
It still gives off a nice overall look at the tank and the coloring.
