I like the more spread out look of the newer arrangement. I agree that a nice big piece of wood, and maybe some more plants, would really fill it out. A black background would look sweet too. I say go with the knife! I love those guys, they are really interesting fish and you are lucky enough to have a big enough tank for one, so go for it!
