South American Aquascape - Apistogrammas

I want to set up a aquascape in a 20 gallon high for a pair of apistogramma and a school of (?I don't know yet?).
Does anyone have a good idea of what this should look like? Rocky? Heavily planted? I've seen these aquascapes online of some kind of crazy leggy wood with large amounts of java fern tied to the middle of it. This will be a low tech tank with low lighting, so I need to keep that in mind. Any thoughts?

Hopefully that gave you some ideas as far as scaping goes, again don't forget pictures when your done.
