Hi,
I'm transitioning from a ten gallon to a 20 long. In my ten gallon I have one Cory cat (lone survivor from my first attempt at a planted tank, 2 years old), 2 powder blue gouramis, and one pleco (who will be finding a new home soon). What fish would be compatible with the gouramis and some more Cory cats? I plan on having a low tech, low light tank with lots of plants. The tank is heated and I will have a canister filter on the new tank. Thanks!

What species of Cory ?

Perhaps look at peaceful, non nippy, calm schooling fish. Zippy fish like zebra danios can stress out your calm fish.

Harlequin Rasboras are a fav of mine.

So far I have one full grown false Julii Cory cat. What about guppies? Would they aggravate the gouramis?

Your Cory is most likely a C trilineatus
aka 3 Lined Cory ( literal translation of the name ). To me it's stupid that they are called "false" juliis, you could call 20 different species false juliis. There are a ton of similar looking Catfish.

It's a pet peeve of mine in case you couldn't tell.
