Really like the Nerite snails, there are some awesome Horned Nerites dramatic, fun looking algae eating machines.
The Amano shrimp would be a good bet as they will get 3" and less likely to be eaten and they are the most comical to watch.
I think the ghost shrimp will be able to get away from the fish mostly but as size goes, if it fits in the mouth, there is danger.
When the Discus get full size, they get huge and they will have pretty big mouths.
On the other hand the Ghost shrimp are cheap.
If you can get some Red Cherry Shrimp RCS, you could get like 50-100 and they would probably keep up the population until the Discus got really big, they might eat alot, still with lots of plants and places to hide they could still populate well. My experience has been locally a lot of hobby sellers will discount for orders of 75-100 for $60-$70, instead of $1. ea
