When will my RCS get their colour back

So I just got 10 RCS in the post today. They are settling in well in their new home, but a few of them don't have any colour. Will it eventually come back once they are settled in

Yes, once they acclimate to the water parameters and get some food, their stress levels will come down and get some color back. Two or three days I'd say.

Not necessarily. Certain strains are just not as colorful as others. If they are truly just stressed and lost their color; then yes it should come back with time. Or, they are just the drab color to begin with. This is why selective breeding is done. Cull or remove the less colorful ones and have the more colorful ones do all the breeding.
