Res turtle with pyramiding

I have a one year old res turtle with a mild case of pyramiding. I put him on a diet about a month ago but nothing seems to be changing. I know pyramiding does not go away but doesn't it hide as the turtle gets larger? Any help would be great thank you. Btw if I spelt pyramiding wrong I'm sorry.

Wile I was holding my turtle today I noticed his shell is peeling a bit on his plastron. I know it's normal for there skin to peel when there growing but is the peeling on his shell a bad thing.
