at what point do the ammonia levels become high enough to kill off the bacteria need for cycling your tank
and should i be doing water changes while i'm trying to cycle my tank if so how often?

If your cycling your tank, you should not do water changes until the ammonia and nitrites have spiked then leveled off to 0. If you are curing LR, you should do frequent water changes to preserve the life on the rock and to aid the bacteria already there in dealing with the ammonia and nitrite from the die off.
