The smell is the first indicator, die off will stink.
If the rock came from anywhere other than precured from your LFS, consider it uncured. Even the if adding precured to an excisting system, I would at least qt it for a few weeks. Put it in a container with a ph and a heater and monitor ammonia and nitrite. When both levels reach zero and stay there for a few days, it is cured. If its a new system, you can use the rock (cured or uncured) to cycle a tank.
Is yours a new system with no livestock?
