Almost done with an eco-complete fishless cycle!!

I've got a 40 gallon breeder that I'm planning on planting. I've got eco-complete with aquarium gravel substrate and got some strange test results early on (aka nitrites on day 4). Well I'm now at 3.5 weeks and after dosing my tank to 1ppm of ammonia yesterday I got 0 ammonia, 0 nitrites and 50ppm nitrates this evening!! I upped the ammonia to 1.5 ppm today so we'll see what tomorrow brings! I get plants on Saturday (hopefully that trip goes well).

I'm planning on stocking the tank with 7 corydoras trilineas, 5 guppies and 5 cherry barbs. Later we may add a trio of ottos. Does this sound like an ok mix? The only reason I'm even considering guppies is because my husband really wants them. I've seen that cherry barbs might be ok but any other suggestions would be appreciated (especially if they eat guppy fry).
