I'm looking to start a small-medium aquarium (55-70g). Should I start with one big filter or two smaller ones?

I think two smaller ones would work best. Especially because if one stops working the other can fill in for it. Two Aquaclear 50s would work well, except you might want one 50 and one 70 if you get a 70 gallon tank.

Any issues with water flow & plants with either setup?

You could do either but personally for a tank of that size I would do a canister. I had an Eheim 2215 on my 40 gal and I loved it; a 2217 on a tank of your size would work well. If you wanted, you could also run an extra HOB filter as a backup and for extra media if you ever needed it.

Thanks. I was thinking of a larger canister with a small HOB.
