Recently set up some new plants, most of the plants have thread like things branching off from various stems of the plants, are these roots?

Yes, just like regular plants, they root.

Some stem plants send off roots from higher up on the stem as well as the roots where they are planted in the substrate. Not sure why they do that, but they do. I like the look, makes me think of a viney jungle, so I leave them.
