Is there any way to slow the growth of hornwort?
I know is can be trimmed easily but it's at the point that there is a ton of it and I don't want to throw any of it out

Well with any plant they all require Co2 water and light (ferts are also nice). If you take these things away they will grow slower. By doing this you run the risk of killing the plant and or the others in the tank. I would recommend shortening your light cycle maybe an hour or two. Otherwise I'm sorry but the only other way is to trim it. Hope this helped
