I keep mine in the fridge also. I don't go through it very fast, so I figured it would be better to keep it refrigerated, like the label says.

I keep mine in the fridge too. The label said it was advised but not required.

Excel should definitely be kept cold for stability reasons.

The other ones you may want to keep cold only if you notice problems with bacterial/fungal growth inside the bottle, or as a prevention against it.

i didn'y keep my first bottle in the fridge...it turned black and smelled like soy sauce. I have kept mine cold since then, and have not had that happen again.
