Not really sure if this counts as a "planted" plant but would a gourami or pleco eat it and what would I need to do to take care of it?

I don't think they would eat it, only thing that would is a crayfish.
Care is easy, they grow verrrryyyyy slowly over long periods of time so don't expect to see rapid growth. It's actually a form of algae, not a plant. Just have a good light and you should be set and good to go.
