I have 1 dwarf gourami which looks super friendly, 3 white clouds and 3 blue red tetras. I have a fluval edge 6 gallon so the filter is the one that came with it. I read that the filter is good for a 6 gallon to a 15 gallon.

I'd just do two-three. Personally I would go with amanos, but if you want ghost shrimp only get a couple. They fight and kill each other if you get too many.

No offense, but that stocking is not good for that tank. Unless you have a sparkling gourami, that tank would be too small for a gourami. Also, tetras and white clouds are schooling fish, so you should have at least 6 of one OR the other. And both are pretty active fish, so some will say you shouldn't even have them in a 6 gallon. Otherwise, shrimp aren't much of a bioload, so having a bunch wouldn't hurt much. One last thing, gourami's will eat the shrimp.
