So I plan on entering the saltwater realm through a forty gallon breeder tank. I was originally thinking of going with a beginner reef or fowler tank with the two clown fish and a damsel, but then I became interested in a snowflake eel because they can "grow out" in a forty gallon. The main reason for this thinking is I will be going to college in 2 years and planned on "tearing it down". I was also attracted to their low maintainance compared to other setups. I have had freshwater tanks for 3 years and am selling my current 75 gallon setup to go towards the 40. So pretty much, I wanted opinions on wether I could keep an eel in a forty gallon for less that two years or would it outgrow it in like six months.

I would keep the 75 gallon for an eel and make sure you have a tight seal on your lid cause they are great escape artiest
