Something I've wondered about for a while is that if it is better to get equipment for your tank that is rated for a bigger size tank than what you have? Is there any benefit as far as function? For instance, I have a 75 reef tank but I use a trickle filter with a skimmer that is designed for a 150 gal tank. One benefit I've noticed is that it will give me more space to work or do other things like make a refugium.

I went bigger rated on all my setups pretty much. As you mentioned it gives more room in the sump. :) It's also a good rule to go double or so rating for your skimmer since it can be the lifeblood of your system.

Most skimmers are loosely rated. I would always suggest choosing a skimmer rated for 1.5 to 2 x your total system volume. Everyone feeds differently, keeps different livestock...
