I wouldn't use a 55 gallon as a sump. You will be severely limited with what skimmer you can use. If anything, make it opposite- use the 55 gallon as your refugium, and use a 40 breeder style tank to hold the skimmer.
I would use a Sea Side Aquatics AS31, or an Octopus Extreme XS350.

Actually, I already decided to go this new route. I'm going to have the 40 gal elevated slightly above the 55 gal so it can act as an overflow.
 
Yesterday I got the concrete bar countertops poured. I also have the aquarium stand built and in place

Looks pretty awesome! I'm a fan of sharp components. I wouldn't go out of my way making a killer setup/ man cave, and skimp on something like a skimmer.
if I may also comment on the tank location- You and your friends are going to be behind the bar more often than sitting in the seats. I would move that tank about 3 feet forward to make it easier to see and easier to maintain with a little closet behind it, where I would keep the components.

That is going to be a sweet setup when its finished. Im going to come over for a drink or few!
 
Just removed the concrete forms....gonna do a whole lot if wet sanding this weekend!

Concrete bar counter tops complete. Took a week to pour, polish, slurry, polish some more, and seal. Next, I plan on building the bar back around the aquarium stand.

Ok, need some advice. My sump is going to consist of a 55 gallon and a 30 gallon tank. The display tank has a total of 4 drilled plumbing coming out of 2 overflows. Each overflow has both a drain and a inlet pipe which goes over the top and to the side.

I was thinking of toeing both drains together and installing a tee. One side of the tee would go to the 55 gallon tank and the other side would go to a ball valve to the 30 gallon tank. I plan on elevating the 30 gallon tank above the 55 gallon tank. The 30 gallon will be the refug and the 55 gallon would be the sump. The refug wold have an overflow drilled in which would to to the 55 gal sump tank. The sump would consist of three compartments: water intake, skimmer, and the return pump which will to a pipe tieing both water in let's together.

I also have another 30 gallon tank which I plan on using as a quarantine tank. I will put a tee on the pipe leading out of the return pump so can tie in a fill for the quarantine tank.

Does anybody have any thoughts on this configuration? Seem feasible?

Update.... Bar sink installed and backsplash pucker out. I am going to try and get the tank in place tomorrow so I can start plumbing the sump and fuge.
