Does anyone know some fish that are affordable challenging to breed and medium sized?
Any help would be awesome
(No livebearers they are to easy and boring!)

How big do you consider 'medium'? Just to get an idea of what you're thinking, because a medium fish to me is around six inches.

Once the above size question is clarrified we can chime in. You may want to say what you have already bred so we have an idea of what challenge means. Antibantods are cool and a bit on the challenging side if you've never do it. The pigmy gouramis like licorice or croaking are more interesting. Penguin tetras, cherry or rosy barbs or celestrial danios would work as well.

Dwarf cichlids, rainbows, some of the slightly bigger cichlids (firemouths, angels etc.) certain plecos.... maybe some barbs or larger tetras of some sort.

Do you have a money limit or size tank(s) you have in mind? Are you willing/able to have grow out tanks, because that will narrow things down too.
