If I wanted platys (1 male 2-3 females) specifically for breeding fry as a treat for my other fish, could I house them in the extra 10g that I have laying around or would I need a larger tank? I would probably put a divider in it of some sort to cordon off a section for birthing as well as keep the fry separate.

10 gallon is fine, just provide a lot of hiding spots for the fry and feed the platies well

I use plastic pasta colanders wedged in a 10gal placing the female in the colander so the fry drop out. If you have another ten you could do that or rig it up in the other tank.

I raise a lot of Endlers and Least Killies for serious breeding. I take my low quality or deformed fish and use them as feeders. With some fish such as my Goodieds and large breeder Swords I stock in 6-8 Least Killie females or 4 Endler females for a natural supply of live food.
