What should I breed?

I've got a 30g standard tank and I've had my "fun" with breeding Convicts. What should I try next? I'm wanting to do something that's more interesting/attractive

Oooh, Rams are cool looking. Anything special I should know about breeding them? Or are they wham-bam, thank you, ma'am?

Specific reason, or just personal preference?

Any specific variants I should look into and which kind of substrate do they prefer? Also, are they aggressive when they spawn, and how many can I comfortably keep in a standard 30g tank?
