I did an entire tear down and rebuild in one day without any cycle - but none of the rock or sand ever stayed out of water. I just used temporary tubs and tanks.
Agree it's best to set it up and then watch parameters for a few days before adding livestock, but if LR and or live sand is moved quickly there should be no mini-cycle.
Either "Key Largo" rock from MarcoRocks or "Reef Saver" from BRS, and there are other sources, are perfect base rock. Becomes great live rock with time.

The poor little guy happily goes after food, eating Cyclops, Mysis and a little spirulina flake. Manages to eat something every day. But still is just getting skinnier. Not lethargic or swimming oddly. Parasites? Something else? Any clues appreciated!

From the sounds of it you may have a 'mini-cycle' just from everything having been disturbed. There may be some die off of organic organisms which could cause some ammonia. Keep measuring daily for a week or so and see if anything comes up. You could dose ammonia like with fishless cycling just...
