Keep offering it. He will find it and then he will be a happy camper. Mine likes zucchini better than cucumber. I feed veggies 2-3 times a week, along with frozen food. I have a heavily planted tank and my BN's don't bother my plants except to clean them.

Try adding more plants/decorations and put food at opposite ends of the tank so they don't see each other.
I also give veggies twice a week and have at least two veggie clips in there far apart when I do. They leave each other alone because they're too busy sucking on their own veggie slice...

Do some extra pwc's, too. It can only help. If I start to see something suspicious, it usually happens when I have gotten behind on pwc's and usually resolves itself when I step it up.

I have found water sprite to be nitrate hogs. If my nitrate levels get too low, they don't do well. Just something to factor in to your experimenting.

My hornwort did better before I started dosing Excel, but it hasn't died. It just isn't flourishing as much as it used to. I chose my other plants (which ARE flourishing) over the hornwort.

Just throwing this out there...a few of my fish will start flashing at the smallest ammonia spike, so don't discount that as a possible cause if there is even a small amount of ammonia present.
