They DO! Very quickly. I had one a while back. He was very cool but once he ate all the algae I had a very hard time keeping him fed. Urchins seem to be more resourceful about finding food in the sand and live longer. Plus they're a lot cheaper!
Funny that you both point out the same thing. I had an ich outbreak a while back and as a result had lowered the salinity to prevent it from reoccurring. I think in the process I never brought the salinity back up to an acceptable range.

You can also try giving them a freshwater dip and then place them into a quarantine tank with hyposalinity (0.014) for a week or so. Add garlic into their diet to keep them eating.
