Ok, so I feel like I understand the pH thing. It's really only a concern if I add fish that are from a drastically different pH.
I just added some driftwood which hopefully will naturally lower the pH just a little.

That's good news! I will monitor the pH on almost a daily basis and not try to adjust it. Right not its between 7.6 and 7.8 which is a little high for the fish I'm keeping but not too much (recommended range is 6-7.5).

Yes. The tap water spikes in pH after 24 hours or so. That's how I found the problem 2 years ago. I just forgot!

I've been using Aqadvisor.com to help determine my stocking levels. It takes bioload into consideration. But I'll be testing the tank regularly and cleaning and changing the water weekly.

Congrats on the new tank! It looks to me like you have some nitrites. Based on your results I think your tank hasn't had enough ammonia to really get started cycling.
Were you able to get any kind of seeding media, I.e. a wet/used filter pad or some gravel from an established tank?

From what I've read, the only way to reduce nitrates is to do large water changes. Your nitrates may be off the charts right now, so doing a single (or 2) water changes is not enough to bring below the max reading.

Good news! My tank is still cycled. I'm working on getting the pH balanced. It was around 7.8 which is abnormally high. Once it's balanced I will add some fish!
