I like idreaminsaltwater's suggestion. In the same vein, I believe a dartfish would work. The same rule applies about a top, because they are known to jump too.
With one bulb, it's either on or off. If you want to have a lighting scheme, you'll have to buy a new hood that can hold multiple bulbs or maybe attach a small led strip for a moonlight effect.

Leave the shrimp in there. It should disintegrate during the course of the cycle, leaving the shell. Once your nitrates shoot up, then remove what is left of the shrimp.
