Probably ur ammonia is so high cause the ph too low :-/
I had similar problem :
API test showed pH 6 but I checked it with digital one and the result was 5.2 :-(
Ammonia going up when pH going down - but in pH lower than 7 the ammonia isn't toxic so keep changing water and check ur...
.. Light more than 10 hours in tank should be more welcome :-)
With feeding -
Mature fish 2-3 times a day
Youngish 3-4 times a day
But the most important - the food should be gone in a few minutes ;-)
I've got similar problem - ammonia and nitrite (NO2) but with more oxygen in the tank and daily water changing the problem is gone (NO2 been longer than ammonia)

I using RO water which is pH 6.4 and KH3 and GH5
Conductivity is about 80
Something in the tank makes the water softer :-/
A few days ago u put shells into filter
So now the
pH from 5,4 goes up to 6.2
KH from 1 goes to 2
GH from 4 goes to 8
and conductivity (all minerals together)...
I used buffer more than year ago and for sure don't wanna use it any more until will know can't find and different way to set up all chemistry of water.
That's my new tank - started near 3 months ago. After first feel up the ph was going up from 6,4 r/o water to above 9. It's makes me mad...
Try to change 25% of water daily and dont forget to add a good minerals for each changing :-)
Too much fresh water in one time change is not good for fish too
The ammonia should give up after few days if the colony of good bacteria in ur tank are strong enough :-)
RO system gives pure clean water - without minerals - it's about 1 part from 3
The 2 parts from 3 it's the wasting water with heavy metals and other minerals which comes from other pipe. - I using the waste water for my garden :-)

Ph in r/o water is 6.4 - which is good to keep discus :-) and KH about 3 degree
But after 8 weeks the pH going down :-(
My API tester shows 6 - to see lower result is impossible with this tester :-(
I got electronic one which shows 5.4 :-(( !!!!
