The water from the tap is under pressure, and contains more dissolved gasses. When you put it into the tank the extra gas bubbles are released. It's generally harmless and will go away in a couple of days as things settle down. So basically it's dissolved gasses coming out of the new water.

Most of them will but you should research the ones you want

gouramis, angelfish, rams, apistos, kribs, severum, festivum, acara, discus, small sunfish species, dwarf cichlids, barbs, loaches, rasboras, danios, corydoras, ottocinclus, white clouds, killiefish, betta and some tetras

When they settle down and get hungry they will eat. If your other fish eat all try feeding them a little bit more.

Just keep the water clean and feed normally
