i certainly think they would be as safe to eat as any other crayfish. For my part, I have been thinking about eating the extras as long as they have grown to size that is.
I have seen a few people here keep the the marbled crayfish. Does no one keep the red claws? is is because they get so large? I am considering them in part of my aquaponic system.
