Another thing I've read is they normally stop eating before they give birth but this fish keeps eating she acts starved. Earlier I thought she might have lost her mucus plug (if fish have those) it look like bloody mucus so that's why I thought it was that but it may have just been poop I'm unsure

Id say At least 2 months if you're wanting them to survive. You may would be able to let them go earlier if they look like are big enough not to fit in the adult fish mouths. This is how you tell if male or female platy. Male= pointed fun underneath belly. Female= more fanned out fin under belly
Yes, different color platies can cross and the platy with three dots on the back fin is a Mickey Mouse platy. Also good luck with the female maybe she will deliver fry!
