So what kinds of snails, hermit crabs, etc. do I need in a 40B to keep it clean and how many as I assume a Skunk Cleaner Shrimp and a Emerald crab will not be enough?

Are the cleaner gobys not good for any particular reason with the other fish I have?

I have been watching them, obviously not 24/7, but I haven't seen them interact with the betta at all, they pretty much stay on the bottom of the tank. I saw the betta and the ghost shrimp stare at each other, but the betta wasn't flaring up or anything.
