Would 7 Glofish Tetra's+7 Longfinned Glofish Tetra's+8-10 Corydoras Catfish be pushing it? (Filter in the tank is a Fluval U3)

I think its a bit heavy, but doable. 6 fish of each species would be more manageable. Make sure you do a decent water change every week.

Corys come in all sizes, they can range from less than an inch upto 4 inches. I would look for a smaller species like one of the dwarf/ pygmy species or something like a panda cory. I think the glofish cory is a bronze cory which is one of the bigger species if that was your thought. If you went with the glofish cory I would only 3 or 4.

Yeah eh I was thinking it's pushing it... I'll be doing a 25-35% water change once a week I was thinking if I were too
As for the Cory I was considering the pandas Corys I read that they can grow up to 2 inches which I figured was decently small enough, and the glofish I originally wanted all long finned Glofish but my fish store only had the normal ones, so I went with it cause they were just as cute lol

I would change half the water once a week.

A 2" panda cory would be on the large size. I've got dozens of them, and unintentionally bred them for several years and don't think I've had one get that big.

Noted 🙂 and that's interesting! Like I said just what I read online haha never really trust 100% what I read lol Figured it was a better idea to ask on here since most people have experience:) I will probably end up sticking with 1 group of each color glofish (7) and a group of corydoras then :) just to be on the safe side
