I've had this heater since February 2021. Recently the temperature in the aquarium is a lot warmer than what the heater is set at. Currently I have the heater set at 72 degrees and two thermometers in the aquarium are showing 80.6 degrees. The heater keeps coming on and I don't know why it would when it's set at 72 degrees and the aquarium water is 80.6 degrees. Any ideas?
 
Heaters generally last a couple of years before the thermostat goes. Time for a new heater. If the thermostat completely fails when it's switched on, it just won't turn off and the temperature will just go up and up. Replace it ASAP otherwise you risk your fish dying from excess water temperature before you even realise there is a problem.

I recently had to replace a heater that was raising the temperature 2 or 3c an hour. Luckily I spotted it. If it had happened overnight, everything would likely be dead.

The equipment you have available in the US will be different to what we have in the UK.

But, I like Fluval M series heaters. We cant get the bigger ones in the UK for some reason, but I'd have them in my aquariums if I could get them. Im currently using Hygger heaters. No complaints.

Eheim as a brand are very well regarded in the hobby though.
