My platy gave birth over the weekend and now I'm trying to figure out when I should remove her from the breeding tank. I'm only seeing 1 fry so far, but I know they can continue to give birth over a few days time. Should I remove her now so she doesn't try and eat the fry? Or should I wait and see if she births more?

I would wait a few more days. Platies tend to be better with their fry than say Guppies, Gambusia or Mollies so as long as you have some places for the fry to hide and you feed Momma regularly, it should be no problem. A single fry from a Platy is not usual so as long as Momma is plump or you can see the area by the vent have the darker area where she's carrying the fry, more should come out. (y)
