Is the albino Cory albino version of a peppered Cory or a bronze Cory I keep hearing different

When in doubt go with the scientific name. For example, the ones on live aquaria are bronzes. However they really could be any of them since it's achieved through selective breeding.

To my understanding albino cory cats are bronze corys.

C aeneus, Bronze Corys are the commonly available Albino Corys.

Yes, there are other species that have albinos but Albino Bronze Coreys are the most common.

A few Corys can cross, but it's not encouraged.

If I cross breed them they won't be fertile right because I don't want those breeding if I bring him back to the fish store

They probably would be fertile, but its difficult to get them to breed successfully without specifically trying to breed them.
