Is 8.5 ph high for platys

Can adding a new fish cause the to spike
 
Adding new fish might change the pH a little. But usually it doesn't change a ton from where it came out of the faucet.

How does adding fish cause the pH to go up?

8.5 is a high(ish) level, but in 99.9% of cases I'd say it causes more harm than good to try and adjust it. Most fish will adapt to a wide pH range assuming they're acclimated properly. I'd recommend a nice, slow drip acclimation.

Does your pH tend to fluctuate, or does it normally stay steady around 8.5?

Mine usually changes (up or down) a little bit with new additions, but that's just me I guess then.
