I like to vary their diet. You don't have to, but I like to, as I enjoy seeing them eat different things. Mine eat specialized Shrimp food, they eat flake foods. They eat omega one algae wafers, they eat Omega one shrimp pellets. Their very favorite is Repashy gel food
My RCS eat anything and everything. As they are in a community tank (tetras, corys and a BN) they have access to all types of food. But during the day they graze on the bio-film on the plants and moss. They never stop eating so I assume a well established tank with plants/moss is as important as specialist foods.
