Been debating on changing tank around

Ive been debating on going soil sub under sand in my 30 gallon.
Ive had a couple ideas but is it even worth troubling the fish for this. I mean I'd have to keep them in a bucket or Rubbermaid then also stress them trying to catch them all etc etc.
I kind of just want to try something else with the look and be more beneficial for my plants. What do you guys think

Instead of doing soil, have you considered something like Seachem Flourite Black Sand or Activ Flora? I have the black sand in my tank (switched from gravel) and I've noticed an increase in overall health of my plants.

Dirt is a great option if you're looking for explosive growth, but it can be tricky. I feel like my sand is as easy as it gets. Still have to feed with root tabs, but it works for me.

Also, your fish will get over the stress. I did my substrate change one night after work. They were pale when I put them in, but the next day they were vibrant and behaving normally.
