Peppermint Shrimp Eggs

Everything I've read says a peppermint shrimp is only supposed to carry eggs for 14 to 20 days before they hatch, they will turn a silvery color and then usually hatch that day or night.

Ours has been carrying her eggs for about 2 and a half months, we have watched her every day and they have never turned silver and we've never noticed any baby shrimp, so I want to guess that its the same batch of eggs.
Is this normal or did we just miss something.

We've got a 20 gallon fish only tank with 2 azure damsels, a watchman goby, several hermit crabs and small snails and 2 peppermint shrimp.
