How does one increase nitrates? Would fewer gravel vac sessions do it?

Yes, and more fish. Ammonia from fish becomes nitrite which then becomes nitrate.

Thought it would be the old nitrogen cycle. Just seems too easy

There may be something you can add if you have something (the plants) using the nitrate up too quickly. In fact, I think that's the first number on fertilizer specifications. Be careful of ammonium nitrate though. It's poison (makes LOTS of ammonia). Maybe somebody else can be more specific. I would want to go for more pretty fish right now.

For aquariums we use Potassium nitrate instead..

Nice solution to have... Get rid of algae by increasing nitrate. Increase nitrate by increasing fish.
