So I have some grass like plant in my aquarium and it's kind of getting too long for my liking. I was wondering if it would be ok if I gave it a short hedge like haircut. Or would that kill and damage the plant. Also, would I just take a pair of scissors and do it?? What's the best way to cut the grass.

I also suggest having a net handy so as you trim the grass you can net out the blades that will otherwise float all over your tank and make a mess.

Big mess! A long, narrow diameter siphon hose works nice too, just suck up the clippings as you trim..

Yes just trim it with a pair of small stainless steel scissors it will grow back eventually.
