I noticed one of my black & white striped damsel swimming up and down in the coner of the tank the other day. They laid a ton of eggs. Now one is protecting them from the triggers. Tough little guy.

Should I do anything, or is there anything I could do? Do I just let them hatch and let the other fish eat them?

you could give it a shot, put them in a hospital tank type set up..mild flow, water from the main and when they start to hatch, switch to a sponge filter and do daily water changes.
