Planaria or nematodes or if they are not very long compared to width they could be very young snails? I don't think I'd worry about the first two unless breeding cos I understand planaria to take fish eggs and shrimplets. Snails can be a problem with plants but assassin snails have been a good...
Probably late in the post for this but seachem excel destroyed my vals. They just melted.
All my plants in my 38g grow fine, if slowly in some cases, except for lilleaopsis braziliensis which has been choked by some hair algae after I fertilised. I have about 2 wpg.
I got 2 assassin snails and they were so effective I now have to feed them. They haven't touched my nerite though - too big. I suspect you're apple snails will also be too big.
In my lfs they use angled top lighting which then kind of reflects within the tank to give some side lighting. I think you'll need some top lighting too. I've not kept them myself, and I've not sorted my own lighting issues, but I did read that they look good with some side lighting.
