Should I be using some other kind of test instead of the AP test kit? A larger tank is already in the planning stages, since I know clowns and plecos will eventually be HUGE. Is there a smaller fish that does the same type of cleanup work that a pleco seems to be doing now?

I just actually setup a 2215 classic filter myself. If you have troubles, let me know and I can take a few pictures of the setup for you. The instructions I got were pretty bad, so it took some hunting around for images. Let me know and I can send pics.

Ditto. Take if from an aquarium newbie, this makes live MUCH easier. My first two, non-python PWCs were a complete nightmare. I was almost sleeping in the street :)

My LFS said Cycle was basically a waste of money as well, but suggested Seachem Stability. It has worked very well for me.
