Most Cichlids are listed with an acceptable pH range from 7.8 - 8.4 (some even higher). I would say 8.0 is fine. Look on the Cichlid-Forum.com fish profiles for specific fish pH requirements.

You can bleach it, just make sure you rinse it THOROUGHLY afterwords. Like, rinse it multiple times until you can small no bleach on the rocks. Also, check out this thread, he washed his holey rock with bleach and it brightened it up as well...

Cookie Cutter - 55-gallons will get you pointed in the right direction for stocking. Also try to google "55 gallon cichlid stock" or similar variations. There are many posts on this forum, and many others like it with lots of information and suggestions.

Cichlid Profiles has all of the "background information" on virtually any cichlid you can name (and a lot you can't).
