So I have a 36 gallon bowfront aquarium with 2 angels, 5 bronze cories, and 4 rummynose tetras (originally bought 7 but I only floated the bag for acclimation so 3 died sadly and I will do drip acclimation in the future) and I was wondering how big of a rummynose school I should go for, I'm thinking of trying to get to a number of around 8 (But would like to go bigger if possible), but I don't wanna overstock so I'm asking here.

You can easily increase your number of rummynose tetras to 8.

As to can you add more? Assuming your filter is up to the job and you are prepared to put in the work of maintaining water quality, no real reason you couldnt go up to 20. 50% weekly water changes. Add them in slowly to give your cycle chance to catch up, monitor water quality as you do to make sure you are overloading the system.

If it was my tank I would add this
6 more tetra
1 bristlenose pleco they make amazing algae eaters fun to watch and I personally enjoy them
1 more Cory and call it a day
