Aponogeton Capuronii, leaves fell off.

1 1/2 month old Natural planted tank, i had a Aponogeton Capuronii that was one of my most successful plants, and exploded in size. for the past few days i'd wake up to notice one of its leaves had fallen and floated to the top. this morning however, i woke up to see all of the leaves floating on top. What could of possibly happened? Ammonia/Nitrites/Nitrates reading 0. only 3 Guppies and 2 Amano shrimp in the tank, and they aren't known plant eaters. I've heard a few plants do this and regrow again, is this one of them?
 
noticed my Amano shrimp seem to be eating around the bulb of the plant where its buried in the substrate, hope they didint eat any delicate parts
